Great for breakfast or dessert, this Piña Colada parfait will transport you to the tropics.

Ingredients
  • 4 tablespoons Chia seeds
  • 1 cup rolled whole oats
  • 1 can of coconut milk
  • 1 teaspoon of vanilla extract
  • ½ cup of coconut flakes/dried coconut, unsweetened
  • 2 cups of fresh pineapple, diced small
  • Agave syrup, to taste
Directions
  1. Place chia seeds, oats, coconut milk, vanilla extract in a large smartbowl™. Stir to combine. Place the lid on the smartbowl, seal the lid, and press the valve to release the air. Refrigerate overnight.
  2. In the morning: remove smartbowl from the refrigerator. Set out four small smartbowls and alternate between layers of the müesli, pineapple and coconut. Top with agave syrup to taste.
