This is really easy caramel sauce, which you can feel free to use for other dishes, in addition to this very traditional flan.  Feel free to make it again, right after you turn out this one so you will have two large flans, enough to feed a dinner party!

Ingredients

this recipe makes 2 batches

  • 1 can sweetened condensed milk
  • ½ a can’s measure whole milk*
  • ½ a can’s measure coconut milk*
  • 3 eggs
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon kosher salt
  • 6 tablespoons sugar, divided
  • 2 tablespoon water divided

*Use the can of sweetened condensed milk to measure other ingredients.

Directions

For the Caramel

  1. Place sugar and water on the bottom of a large smartbowl™. Place the lid on the smartbowl, seal and press the valve to release air. Microwave for about 1 minute and 20 seconds, or until caramel is golden brown; almost tawny, adding time in 10 or 20 second increments.
  2. Carefully remove the bowl from the oven using silicone mitts or a dry, folded kitchen towel. Remove the lid from your smartbowl, grab bowl with both hands using your mitten and slowly twirl the bowl so the caramel covers the inside, up to its collar.

For the Flan

  1. Pour the milks, eggs, vanilla and salt into a blender. Blend until you see no more specks of yolk.
  2. Pour half of the mixture into your large smartbowl™ and store the remaining mixture for later or repeat the caramel and make two bowls. Place the lid on your smartbowl™ with the caramel and flan. Seal iand press the valve to release air. Microwave for about 4 minutes, or until the flan is jiggly but clearly isn’t sticking to the sides (adding time in 20 second increments).
  3. Once flan is cooked, reseal your smartbowl and press the valve to release air and place the flan directly into the freezer until it sets.
  4. Remove your smartbowl from the freezer and let stand for 3 minutes, making sure the flan is separated from the bowl. Serve it straight out of your smartbowl™ or turn it over onto a serving plate.
