This will make a giant cookie which you can turn out of the bowl and cut like a cake or, spoon out into individual servings.  Smartbowl Team Warning:  It’s way too easy to sit with a spoon and eat this entire cookie out of the bowl yourself.

Ingredients
  • 2 tablespoons butter
  • 2 tablespoons almond butter
  • 4 tablespoons light brown sugar
  • Pinch Kosher salt
  • ½ teaspoon pure vanilla extract
  • 2 extra large egg yolks
  • 2 teaspoons of coconut milk
  • 6 tablespoons of all-purpose flour or oat flour
  • 2 tablespoons pecans, toasted and chopped
  • ¼ cup coconut flakes, unsweetened
Directions
  1. Place butter and almond butter in your large smartbowl™. Place the lid on the smartbowl, seal and press the valve to release the air. Microwave for about 20 seconds or until melted. Carefully remove your smartbowl from the microwave and stir.
  2. Add sugar, salt, vanilla, egg yolks, milk, and flour to your smartbowl and stir until thoroughly combined. Fold in pecans and toasted coconut flakes and press the entire cookie dough lightly into the bowl. Place lid on the smartbowl, seal and press the valve to release the air. Microwave for about 3 minutes, until the surface of the cookie is no longer shiny. Add time in 20 second intervals, if needed.
  3. Carefully remove the smartbowl from the microwave, push the lid down and press the valve to release air. Set aside for 2 minutes to allow the cookie to finish baking in the smartbowl.
  4. Serve warm with ice cream.
