This fragrant, light and quick-to-make dish hails from the Northern Coast of Brazil.

Ingredients
  • ½ cup onion, chopped
  • 1 ½ teaspoons ginger, chopped or grated
  • 2 cloves garlic, chopped
  • ½ cup yellow peppers, seeds, white parts discarded, and chopped
  • 1 cup crushed San Marzano tomatoes
  • ¾ cup coconut milk
  • 1 pound shrimp, shelled, deveined, dried with a paper towel and seasoned with salt and pepper
  • 2 tablespoons scallions, chopped
  • ¼ cup cashews, toasted and chopped
  • Cilantro to taste
  • Kosher salt to taste
  • 1 1/3 cup cooked rice, basmati or jasmine
Directions
  1. Place the onion, ginger, garlic, and peppers  in a large smartbowl™. Place the lid on the smartbowl, seal and press the valve to release air. Microwave for 2 minutes until vegetables are soft.
  2. Pour tomatoes and coconut milk into the smartbowl.  Blend with an immersion blender, until smooth. Add the shrimp. Place the lid on the smartbowl, seal and press the valve to release air. Microwave for 4 minutes, check to make sure shrimp are cooked through.  If you need more time, add in 20 second increments.
  3. To serve: place rice in 4 separate bowls. Top with the stew, making sure each is served 4 shrimp. Top with cashews, scallions, cilantro. Serve with hot sauce on the table.
