These meatballs are great on their own, on a sandwich, spooned over pasta or served on top of polenta.

Ingredients
  • ¼ pound ground beef
  • ¼ pound ground pork
  • ¼ chopped white onion
  • 1 clove garlic, chopped
  • 2 tablespoon bread crumbs
  • 1 tablespoon fresh oregano, chopped
  • 1 egg yolk
  • 2 teaspoons olive oil
  • ½ cup store-bought tomato pasta sauce
  • Salt and pepper
  • Parmesan cheese, grated
Directions
  1. Combine first seven ingredients in a mixing bowl. Form into 4 equal-sized meatballs.
  2. Place meatballs into a large smartbowl and drizzle with olive oil. Place the lid on, seal and press down center valve to release air. Microwave for 4 minutes. If needed, add time in 15 second intervals until the meatballs are just cooked.
  3. Stir in tomato sauce. Place the lid on, seal and press down center valve to release air. Microwave for 45 seconds. Sprinkle with Parmesan cheese.
