1 recipe Tomatillo Salsa or 1/2 cup store-bought salsa verde, reserve 2 tablespoons for serving
8 small corn tortillas, warmed
½ small avocado, sliced
2 tablespoon white onion, chopped
2 tablespoons cilantro, leaves picked
1 lime, cut in half
Place the shrimp and salsa verde in a large smartbowl™. Place the lid on, seal and press the valve to release air. Microwave for 2 ½ minutes or until the shrimp are just cooked. Move shrimp and salsa to another plate and rinse and dry smartbowl.
Warm tortillas: place tortillas in large smartbowl. Microwave uncovered for 15 seconds.
Assemble 4 tacos by doubling up two corn tortillas for each taco. Place the shrimp, avocado, white onion, and cilantro on top of each taco. Squeeze the lime and spoon some of the salsa verde on each of the 4 tacos. Serve.
