We’re showing it with shrimp, but it’s equally delicious with any of your Weekday proteins.

Ingredients
  • 2 cups mixed greens
  • 1/3 cup black beans, peeled and shredded
  • ¼ cup corn, shredded
  • 1 tablespoon red onions, thinly sliced
  • 1 tablespoon scallions or chives, finely chopped
  • ½ cup red bell peppers, seeded, white parts removed and diced
  • 2 tablespoons cilantro, leaves only
  • 1 tablespoon sunflower seeds, toasted
  • 3 Tablespoons Chipotle-Orange Vinaigrette, divided
  • 4 ounces of weekday chicken breast, tofu or shrimp
Directions
  1. Arrange all herbs, vegetables, greens and seeds in a large smartbowl™.Place the lid on the smartbowl, seal and press the valve to release air. Take it with you. Make sure to keep it refrigerated!
  2. Place marinated protein in your medium smartbowl™.  Top with with 1 tablespoon of the salad dressing. Take it with you and keep refrigerated.
  3. When ready to eat: arrange the smart protein along the bottom and sides of your medium smartbowl. Place the lid on the smartbowl, seal it and press the valve to release air. Microwave for about 2 minutes.
  4. Pour 2 tablespoons of the dressing over the salad, top with protein. Place the lid on the smartbowl and shake. Remove lid and enjoy!
