Bourbon-Orange Cranberry Sauce

Forget the cans. In smartbowl you make cranberry sauce fresh, fast and


2 cups cranberries, fresh, picked, rinsed and strained

1/2  cup sugar

1/2 teaspoon pectin powder

1 ½ teaspoons ginger, fresh, grated

¼  cup orange juice, or half of a large orange, juiced

2 tablespoons water

2 tablespoons bourbon

1/2 cinnamon stick

1 star anise

2 cloves, fresh whole

1 orange zest, fresh, to taste

  1. Combine the cranberries, sugar, pectin, juice, water, ginger, cinnamon, star anise and cloves in a large smartbowl.
  2. Press the lid on the smart bowl and press the valve to releases air. Microwave until cranberries begin to pop, about 2 minutes, adding time in 20 second increments, if needed. This should not take more than 3 minutes, total.
  3. Remove from the microwave, stir, then repeat step number two, once.
  4. Remove the lid from the smartbowl, stir and microwave, uncovered, for another 3 minutes, increasing time in 20 second increments if necessary,  until the sauce coats the back of a spoon.
  5. Carefully remove the aromatic spices from the sauce with a tong because sugar is hot and stir.
  6. Seal the lid, press the lid down and press the valve to release air.
  7. Store, refrigerated or until ready to serve.

To serve: Transfer the sauce to your medium smartbowl and  grate or zest an orange over the cranberry sauce.
