This recipe is great with any root vegetable- just peel and cut into 1-inch dice and follow instructions!

Ingredients
  • 1 pound fingerling or Yukon Gold potatoes, cut in to 1-inch cubes (about 1 pound), peeled or unpeeled both work
  • 1 cup water
  • 2 cloves garlic
  • ½ teaspoon Kosher salt, or to taste
  • 1/8 teaspoon white pepper
  • 1 teaspoon extra virgin olive oil
  • 1/3 cup whole milk
  • 2 Tablespoons unsalted butter, room temperature
Directions
  1. Place potatoes and water into a medium smartbowl™. Place the lid on the smartbowl, seal and press the valve to release air. Microwave for 4 minutes, let stand, covered, for about 2 minutes. Drain.
  2. Add the garlic, salt, pepper and olive oil to the smartbowl, seal and shake. Press the valve to release air and microwave about 2 minutes, adding time in 30-second increments, if needed.
  3. Remove your smartbowl from the microwave, place on a silicone trivet, or over a kitchen towel and uncover. Mash the potatoes using a wooden mortar, masher or immersion blender/processor and garlic mixture they way you prefer, pouring milk in in a slow, steady stream. When puree is creamy, adjust for seasoning and fold in the butter using a silicone spatula.
