A simple weeknight side dish maximized in flavor because of all of the umami.  Serve as a side for salmon, or toss into buckwheat or rice noodles or even Zoodles for a great main dish.

Ingredients
  • 1 pound seasonal wild mushrooms, cleaned
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, chopped
  • 1 teaspoon Mediterranean Herb Blend
  • 1 shallot, chopped
  • 1 tablespoons Marsala or other wine of choice
  • 3 tablespoons flat leaf parsley, chopped
  • kosher salt and pepper to taste
Directions
  1. Cut the edges of the stems off the mushrooms. Cut mushrooms in quarters or in ½ inch slices.
  2. Put olive oil, garlic and herbs into the medium smartbowl™. Place the lid on the smartbowl, seal, and press valve to release air. Microwave for 30 seconds.
  3. Remove the lid from the smartbowl™. Add mushrooms, shallot and wine. Place the lid on the smartbowl, seal, and press valve to release air. Microwave for 30 seconds.
  4. Remove the smartbowl™ from the microwave. Let stand with the lid on for 5 minutes. Remove lid, sprinkle with parsley and season with salt and pepper.
