This dish is made with ripe yellow plantains which are slightly sweet.  These can be seasoned either sweet or savory. They are just as good with pumpkin spice and butter, as they are with cumin and garlic. Don’t confuse them with green plantains which are pretty much only good for making tostones!

Ingredients
  • ¾ pound ripe plantain, cut into three pieces
  • water
  • Kosher Salt and black pepper
Directions
  1. Place your pieces of plantains with their skins on, inside a large smartbowl™. Arrange plantains and fill the bowl with water until they’re a little over hallway submerged. Place the lid on the smartbowl, seal, and press the valve to release the air. Microwave, about 4 minutes, until the color of the plantains begin to turn yellow and have softened.
  2. Turn the plantains over using a fork. Place the lid on the smartbowl, seal, and press the valve to release the air. Microwave another 4 minutes. Let the bowl stand for two more minutes. Strain the water out and peel your plantains using a fork. Discard peels.
  3. Mash the plantains with a fork, this will be very easy. Season with salt and pepper.
