Berry Chia Parfait

Servings: 1

  • 4 tablespoons Chia seeds
  • 1 can of coconut milk
  • 1 teaspoon of vanilla extract
  • 1 cup of your favorite granola
  • 1 cup of fresh berries, diced small
  • Optional:  1⁄4 cup Honey or maple syrup

Directions:

Place chia seeds, coconut milk, vanilla extract in a large smartbowl. Stir to combine. Place the lid on the smartbowl, seal the lid, and press the valve to release the air.

Refrigerate for 4 hours or overnight. 

Scoop out 1/2 of the chia coconut mixture into a bowl. Top with berries and honey or maple syrup, if desired.
