Salmon and Kale Recipe

Step 1: Place 8 leaves of kale, torn into small pieces, into a large smartbowl.

Step 2: Place 6- to 8-onces of wild salmon on top of the kale.

Step 3: Squeeze lemon juice on top of the salmon and kale.

Step 4: Season the salmon and kale with salt and pepper.

Step 5: Place the lid on the smartbowl, push it down to seal, and press the valve to release any air.

Step 6: Microwave for 2 minutes and test for doneness (more time may be required for well-done salmon).

Step 7: Remove the smartbowl from the microwave and take off the lid.

Step 8:  Drizzle the salmon and kale with extra-virgin olive oil and lemon zest.

Step 9: Enjoy this quick, easy, and healthy meal!

Special Tip – If you are using skinless salmon, it’s important to reduce the cooking time. Microwave it for 90 seconds, test for doneness, and add time in 15-second intervals, if needed.
