Halibut with Spinach & Tomatoes

This recipe utilizes basic ingredients to create a flavorful and nutritious dinner in no-time. For this delicious staple, you will need:

2 cups baby spinach

1 chopped garlic clove

¾ cup grape tomatoes cut in half

6 ounces halibut (you can use another white fish as well).

2 teaspoons olive oil

½ of a lemon

1 tablespoon fresh chopped basil

1 tablespoon of water

Salt and pepper to taste

To start, combine the garlic, tomatoes, spinach, and water in your large smartbowl. Use the salt and pepper to season your fish. Add the fish on top of the veggies in your smartbowl. Drizzle the olive oil over your fish, and place the lid on. Seal the lid, then release air by pressing the valve. Place the smartbowl in the microwave, and cook for about a minute and a half. Continue cooking in 15-second intervals if you need until the fish is fully cooked. When done, remove the smartbowl from the microwave and take off the lid. Top with your fresh basil, and squeeze the lemon over the top to taste. In about five minutes, you have a healthy and delicious meal!
