  • 1⁄4 cup beets, peeled and shredded 
  • 1⁄4 cup carrots, shredded 
  • 1⁄2 cup red cabbage, shredded 
  • 1⁄2 cup yellow bell peppers, julienned (sliced)
  • 1 1⁄2 cups spinach
    1⁄4 cup cooked quinoa 
  • 2 tablespoons sunflower seeds, toasted 
  • 2 tablespoons Green Goddess Dressing (see below) 
  • 4 ounces Weeknight Chicken- see Day One recipes (great with smartbowl Dijon Mustard Marinade—see recipe below) 

Directions:

Add all ingredients except salad dressing into the large smartbowl. Place the lid on the smartbowl, seal it, and take the smartbowl wherever you’re going. Keep refrigerated until ready to eat. 

When ready to serve, pour dressing over the salad. Place the lid on the smartbowl and shake. Add chicken, if desired. 

 

Dijon Mustard Marinade
Quantity:  1 cup

  • 2 cloves garlic, minced
    2 tablespoons Dijon mustard 
  • 1 tablespoon white wine vinegar
  • 2 tablespoons extra virgin olive oil 
  • 2 teaspoons honey 
  • 1 tablespoon Mediterranean Herb Blend (see recipe below) 
  • kosher salt and white pepper 

Directions: Place all ingredients in the medium smartbowl, mix well, and season with salt and pepper. Refrigerate in smartbowl until ready to use (will last a couple weeks). 

 

Green Goddess Dressing

Quantity:  1 cup

  • 3⁄4 cup Greek yogurt 
  • 2 anchovy filets, packed in water 
  • 1 scallion, chopped 
  • 1 1⁄2 tablespoons parsley 
  • 1 1⁄2 tablespoons chives 
  • 2 tablespoons extra virgin olive oil 
  • 1 tablespoon lemon juice 
  • 1 teaspoon fresh tarragon or basil, chopped 
  • kosher salt and black pepper 

Directions: Puree all ingredients in a food processor or blender. Season with salt and pepper—but be mindful that anchovy filets can be salty. Store dressing in the small smartbowl in the refrigerator for a couple weeks.

 

Mediterranean Herb Blend 

  • 2 tablespoons dried thyme
  • 1 tablespoon dried oregano 
  • 1⁄2 tablespoon dried rosemary 
  • 1 teaspoon dried marjoram 

Directions: Place all ingredients in the small smartbowl. Cover, shake well, and store.
