Winter has arrived, and luckily, so have winter vegetables! Winter vegetables, such as squash varieties, potatoes, Brussel sprouts, and kale, are packed with nutrients, and can easily be incorporated into healthy meal ideas that fill you up. Get cozy by whipping up this winter favorites in the microwave:
Restorative Vegetable Miso Soup
1 teaspoon sesame oil
½ cup onions, chopped
½ cup butternut squash, peeled and in ½-inch cubes
1 cup mushrooms, cleaned and sliced
1 tablespoon white miso paste
1 ½ tablespoon Asian Marinade
1 cup water
1 cup low-sodium vegetable broth
4 cups spinach leaves, loosely packed
1 cup bok choy, chopped
red pepper flakes or hot sauce (to taste)
kosher salt and pepper
fresh cilantro, chopped
2 tablespoons scallions, chopped
2 teaspoons sesame seeds, toasted
1 lime quartered
First, place the sesame oil, onions and squash in your large smartbowl™. Cover, seal and press the valve to release air. Then microwave for one minute
Next, add the mushrooms, miso paste, Asian Marinade and water to your smartbowl™. Seal the bowl, press the steam valve and microwave for 2 minutes.
Add the vegetable broth, spinach, and bok choy and microwave for 3 minutes with the lid sealed and air valve open.
When you remove the soup from the microwave, allow it to stand in the smartbowl™ for 5 minutes with the lid on as it continues to cook.
Ladle the soup into bowls and season with red pepper flakes, salt, and pepper. Add the cilantro, scallions and sesame seeds, and squeeze lime wedges into the soup if desired. Enjoy!
